Last weekend, we had a major heat wave down here in San Diego. Elliot and I were out at the Farmer’s Market, and soon realized it was much too hot to be walking the streets. I picked up some fresh mint, and we headed home to make some refreshing mojitos and sit by the pool. The mint, raspberry + lime combination in this cocktail was exactly what the day needed. Personally, I prefer the vodka in this recipe over rum, but you can use whichever you like!
Raspberry Mojitos (serves 2)
10 + Mint leaves
8 Fresh raspberries
2 Lime wedges
1.5 oz Simple syrup
3 oz. Vodka
Club soda
Ice
Muddle mint leaves, raspberries, and lime wedges in a large mason jar or shaker. Add simple syrup and vodka. Pour into two glasses with ice. Top with club soda and stir. Enjoy!
